Bloom the Gelatin
- Sprinkle the unflavored gelatin powder over 1/4 cup cold water in a large mixing bowl. Let it sit for 5 minutes until the gelatin absorbs the water and becomes spongy. Pro tip: Don't skip the blooming step - it ensures smooth, lump-free gelatin every time.
Create the Base
- Bring 1 1/2 cups of water to a rolling boil. Slowly pour the boiling water over the bloomed gelatin while whisking constantly to dissolve completely. Pro tip: Pour slowly and keep whisking to prevent any lumps from forming.
- Add the fresh lemon juice, liquid stevia, and coconut extract (if using). Whisk until everything is well combined and taste for sweetness, adjusting stevia as needed.
Add the Fruit
- Allow the gelatin mixture to cool for 10 minutes at room temperature. Gently fold in the mixed berries and lemon zest, distributing them evenly throughout the mixture. Pro tip: If the mixture is too hot, the berries will break down and make it cloudy.
Set and Chill
- Pour the mixture into your prepared 8x8 inch dish or individual molds. If using one large dish, the gelatin should be about 1 inch thick. Pro tip: Lightly spray your molds with cooking spray for easy removal later.
- Refrigerate for at least 2 hours or until completely set. The gelatin should be firm and bounce back when gently touched.
Serve and Enjoy
- Cut into squares if using a large dish, or carefully remove from individual molds. Serve chilled and store any leftovers covered in the refrigerator. Pro tip: Dip the bottom of individual molds in warm water for 10 seconds to help release the gelatin easier.
Notes
- Can be made up to 5 days ahead for meal prep convenience
- Adjust stevia to taste preference - start with less and add more as needed
- Use silicone molds for easy removal and perfect individual portions
